Die Abwesenheit von Gluten gebe den Stärkekügelchen offenbar mehr Raum, um quaddelig zu gelieren. Denn das Klebereiweiß Gluten bildet in normalen Nudeln ein stabilisierendes Gerüst und schließt darin die Stärkekügelchen ein, was wiederum deren glibbriges Anschwellen begrenzt. Die Folge der Glutenfreiheit ist also erhöhte Wabbelgefahr. Deshalb darf man Nudeln ohne Gluten keineswegs zu lange kochen. Sie verzeihen es einem nicht.
