If you go to someone's profile page on here, you may notice an option to "Add note" or similar. This lets you add private notes that only you can see. The person in the profile cannot see notes written about them.

Notes can be used for many different things, for example:
- Working together with people you can note their role in the project
- If you've blocked someone, you can note why
- Adding important info that they haven't put in their own bio

If you're on a computer, just click a blank spot somewhere else on the page. I'm not sure about how that works on a phone but I'd guess you could just touch a finger to a blank spot or maybe touch one of their posts. Anything to change the cursor's or mouse pointer's focus. I hope that helps.

Yeah, just click elsewhere and it should say "saved".
Note that there's a bug on the current release version of Mastodon which can make it display the previous version even if you've saved a new version. Workaround for this is to just refresh the page, it will then show you the latest saved version.
This bug has been fixed in the upcoming version of Mastodon, but it hasn't been released yet.

In theory yes, in practice they probably wouldn't.
If an admin has access to the database AND if they have the time AND knowledge to go through the raw data, they could see anything on their instance.
There's nothing in Mastodon's own software that does this though. Not all Masto admins have direct database access, for example if they use managed hosting.
The situation is the same on all social networks. If you need to share sensitive info, use an E2EE messenger instead.
