Amish Cinnamon Bread:
½ cup softened butter salted
¾ cup granulated sugar
¼ cup packed brown sugar
1 large egg
1 teaspoon vanilla extract (I use Mexican vanilla)
1 cup buttermilk
2 cups all purpose flour
1 teaspoon baking soda
Cinnamon Sugar Filling & Topping:
⅓ cup sugar
1 ½ teaspoons cinnamon
2 tablespoons melted butter
Instructions:
Preheat oven to 350ºF & grease 9X5 loaf pan w/ butter.
Add softened butter to large bowl.
Add white & brown sugar to bowl & mix w/ hand mixer on med-high +
Add egg, vanilla & buttermilk & mix until fully incorporated.
Sift flour & baking soda into bowl & mix w/ silicone spatula until flour is absorbed & no large lumps remain.
Stir together ⅓ cup of sugar & 1 ½ teaspoons of cinnamon & set aside.
Add half the batter to prepared loaf pan & add half the cinnamon sugar mixture evenly on top of batter. Use chopstick to swirl it into batter.
Add remaining half the batter on top, smoothing evenly. +
Add remaining cinnamon sugar mixture & swirl into the top layer of batter.
Drizzle 2 tablespoons of melted butter on top of loaf.
Bake in preheated oven for 50-70 minutes, until toothpick comes out clean when inserted into center.
Allow to cool for 20 min & coax out of loaf pan & transfer to a wire rack.
