I ended up reworking this even further, to now wrap everything in a loop that waits for ffmpeg to exit and continues re-spawning if it wasn't a purposeful kill, since connections and encoding can both be extremely glitchy.
Combined with running this as a cron every 10 minutes to recover from uncaught issues, it's now probably as stable as it could be.
Should be the final version - I think I'm completely happy with it at last! 😊
