Update on the oat flour pumpkin muffins.

The recipe says to cook them for 22 minutes.

We're using silicone baking cups, ungreased, and put streusel on top.

We're at 40 minutes and they are still raw inside.

Wtf.

We're at 50 minutes. The inside temp is 210°F. Toothpicks still withdraw tacky. We're giving up and letting them rest on the counter.

In good news:

1) the silicone baking cups released flawlessly, and the outside of the muffins has a good brown;

2) Mr Bostoniensis is extremely enthusiastic about the flavor of the half-raw muffin he tried.

Of note, we were worried that leaving the muffins in there so long would burn the streusel, but it's barely browned.

Honestly, the outsides are too browned, and they're a bit leathery. The insides are... I do not have words for this consistency. Fudgy? Rubbery? Bouncy? Coagulated?

The outsides were also in the oven above twice the expected time?

Could be the leavening agent is old and tired, whether baking powder or baking soda, and for this to mean the bubbles are uneven and thus the more bubbly upper/outer bits insulate the inner bits which polymerize in consequence.

I can recall a few recipes which neglected to note they were presupposing thoroughly industrial mixing machinery and that mere mortals would take much longer to get enough air in the dough, too.

Eye suspect that thus is because the silicone baking cups don't conduct heat unlike metal backing pans.

One of my kids likes to kick a ball around sometimes and doing that with them somehow gives me all the gender feelings.

The body language around football (not just playing, but applauding a good move, shouting "nice!" or "noooo!" or "goal!") feels both very male-coded *and* strangely right and good.

Protest thread #65: Bridge Troll Rave!

Since it's now getting dark at 5pm most places, we're lighting up our signs and flags. Since we're got some boomers who remember the disco era, we've also got disco balls! We had a whole resistance party on the bridge again, demanding support for Ukraine and the release of the Epstein files.

We also had literal taco Tuesday, as one nice older man brought a bunch of fantastic homemade burritos as well as Halloween candy.

...middle fingers and ultra fragile men who blew exhaust on us out of their overcompensation trucks, but mostly we got mad honks from people stuck in traffic who loved our signs.

As one of the other women said to me, "The people who flip us off... I just wonder, what exactly do they object to? I remember when everybody agreed on exposing pedophiles and having a democracy." I heartily agreed. It's useful to gauge the public response, but it's not otherwise worth noting the middle fingers.

So now I'm back, it feels like Christmas Eve and we're already getting our first presents from Virginia and New Jersey!
