I feel like parsnips really come down to how they are prepared. In my flavour brain, they are a mustard , potato, carrot and I really like that with something a little salty and sweet
My, probably not helpful advice, is treat them the way you would treat carrots, though they probably wouldn't taste good candied since they're already usually so sweet.
I don't like them glazed that much, but i do like them tossed with garlic, salt and pepper and then roasted and drizzled with a little honey and some crumbled blue cheese after they come out of the oven.
I think they are sometimes an unsung hero in some things. I make a soup that is definitely not the same without them. It's like they expand the flavour of other vegetables in a really nice way.
Winter Warmer Soup from Ultimate Vegetarian Cookbook - Roz Denny
INGREDIENTS Simmer all then puree • 3 medium carrots, chopped • 1 large potato, chopped • 1 large parsnip, chopped • 1 large turnip, chopped • 1 onion, chopped • 2 tbsp oil • 2 tbsp butter • 6 cups stock or water • S&P • 1 piece fresh ginger, finely minced Finish with: • 1 1/4 cups milk • 2 tbsp dill Top with: • 3 tbsp creme fraîche or yogurt Fresh cracked pepper
Just until they are a bit mashable. Between 20-30 mins I would say. I skip the milk some times and just add a little more stock so it's not super thick sometimes too. It depends on the size that you cut the vegetables up
I also vary the amount ginger anywhere from 1 tbsp to 2 tbsp depending on how I'm feeling. Sometimes I want a little more ginger for the spiciness/warming.
I just realized I didn't include any instruction with the soup! I just made it last night. I like it better without the milk. I just sauté the veggies in the butter until they are wilted but not browned. Cook until mashable in the broth and then puree the whole thing and add salt and pepper and the dill until it tastes balanced. Even better on the second day.
@mayintoronto Lol, a lot of people don't seem to like them. Either that or have never heard of them. They look like carrots, so they would always go side by side in stews. They're sweet and earthy at the same time and usually softer than carrots and so good!
