Ruins of Saint Andrews Cathedral, Fife, Scotland.

Built in 1158, it fell into disuse and ruin after Catholic mass was outlawed during the 16th Century Scottish Reformation. Once it was the biggest cathedral ever built in Scotland.

Mince pies are of English origin, but today they are very different to how they were when they first appear in England.

The idea of mixing meat with fruit and spices, is no doubt thanks to the returning crusaders in the 13th century, who were trying to recreate, what they had seen and tasted whilst away.

Tradition states that if you eat at least one mince pie everyday during the 12 days of Christmas you will have good luck for the next 12 months. #mincepies #Christmas

The jousting armor for Archduke Maximillian III of Austria was made in 1571 by Anton Pfeffenhauser, an armorer from Augsburg, Germany. The armor is made of steel with gilded bas-relief and is currently housed in the Cleveland Museum of Art.

Last week, I visited Dickinson College in south-central Pennsylvania. Currently recognized as the most sustainable small liberal arts college in the U.S., Dickinson incorporates climate action into many aspects of students' everyday life, from a free clothing exchange to a bio-digester turning food waste into renewable energy to over 130 classes with a sustainability component.
