Well, the Peertube instance for tchncs.de has worked well for me in my rather limited use. It's a general instance, so I wouldn't say it's tailored to your usecase, but the moderation has been decent.

That said, I do like the idea of a nature centered Peertube instance. I'd love to find somewhere that people upload naturescape ambiance videos (without music!) like I often leave on in the background at home.
