Of course, I made a crisp sandwich for International #CrispSandwichDay.

Thing is, though, I don't like the classic British crisp sandwich, crisps on white sliced spread with marg, optional sauces. No shade on those who do. Each to their own. Just not my thing.

Crisps as a texture to contribute to a more complex sandwich, though, definitely absolutely 100% my thing. So that's what I made.

Tortilla chips are crisps, right? Obviously yes. I made beef nachos, and put them in a sandwich with spring onions and shredded lettuce. The bread was a homemade sandwich loaf, lightly toasted. Spread with a spicy zingy mayo, that I made with lime juice, garlic, chilli, cumin, salt and a decent amount of black pepper.

It was very much a crisp sandwich, although also a little more than that. And of course I served it with the most appropriate drink for a crisp sandwich, a #BigVimto.

My sandwich repertoire is pretty limited, I tend to stick to the same old favourites: cold chicken, lettuce and mayo; tuna, sweetcorn and mayo; and egg mayo with watercress. I don’t know what we’d do if I ran out of mayo

I must admit I have a bit of a problem with recipes that have something already delicious as a start point! I'd eat the chips before they made it into the sandwich!

I saw a recipe last week for gnocchi that started with a baked potato. Stop there! Eat the baked potato!

Similarly a recipe for mushroom soup that would have me make garlic mushrooms and then turn them into soup! No! I'd eat the mushrooms first!

Got to sit a bit in the sun outside at halftime as planned #today.
But the sunshine was filtered by the clouds. So, no belly basking was possible. The breeze blew kinda strong, too. So, the idea of sitting bare bellied didn't sound worth testing the comfort of it, in the cool air anyway. πŸ₯΄

The wife collected the small eggplant fruits from the garden, kinda sorta afraid the weather gods might ruin em with some surprisecold weather or something. So, she's out in the kitchen baking em up nice n crispy for snacking on, and if they last, for some eggplant parmesan for dinner tonight. πŸ˜‹πŸ€—

Welp, back to football on the comfy couch. πŸ’ͺ

Diary of an AuDHD Squirrel. Day 728 , Saturday 25/10/2025

Saturday started around 8am (ish) after, quite frankly, an rubbish night. On the plus side I have learnt that sleeping lying down is, for the time being, a fools game. Sleeping in a seated position in bed seems to be the least contentious & a decent dose of pain meds helps to keep it that way.

It's been a mostly lazy day - I sorted some laundry out this morning & checked that the repair to the boiler was holding. (it is!)

I went wild tonight & had a small portion of fried chicken & chips - time will tell if this was wise!

Final Thoughts.

I'm hoping that tomorrow is a more restful day - my back likes it that way!

Got into the garden today. Dug up the sweet potatoes and harvested Brussels sprouts. Neither was a large amount. Still, we stuck out the challenging year in the garden.

Yesterday was a long day for us.
We spent the whole morning at the VA medical clinic.
No matter how many times you hear that your condition will not be getting better it is still hard to accept.
Today is rainy and cold. As soon as I saw the sky open up over the ocean I bundled everyone into the truck to chase some fresh air. The truck takes us right to the ocean, without passing go. We use the designated access roads without actually dropping on to the beach. It works perfectly to accommodate mobility limitations.
Summer was a happy dog.
We all benefit from these small outdoor adventures and getting a break from unpleasant realities we can leave for later.
